A double crochet, chain 1, double crochet worked into the same stitch, forming an open V shape across the fabric.

Work to the stitch where the pattern calls for a V-stitch.
Work 1 double crochet into the stitch.
Chain 1.
Work a second double crochet into the same stitch — the pair, with the chain-1 gap between them, forms the V.
Skip the next stitch, or stitches per your pattern, and repeat the V-stitch in the following stitch.

The chain-1 between the two double crochets is what holds the V open — skip it and you'd just have a plain double crochet shell instead.
V-stitch works up quickly and uses less yarn than a solid stitch, since roughly a third of every repeat is open chain space.
On the following row, V-stitches are usually worked into the chain-1 space of the V below rather than into the double crochet stitches themselves — check your pattern for where to place your hook.
